Uncle Dick and Auntie Kathy’s American Goulash

  • 2lb ground beef
  • 2 cans Pastene Kitchen’ Ready Ground Peeled Tomatoes, 28 oz
  • 1 chopped green pepper
  • 1 small chopped onion
  • Minced garlic
  • Salt and pepper to taste.

Cook that together, minus the peeled tomatoes (heat tomatoes separately). Cook elbow macaroni and add it all together and serve. You can add anything else you like.John adds sausage (sweet) cut up.

Pork Roast

  • Mince 8 cloves of garlic or use the jar bought all diced in a dish
  • Add Rosemary
  • Salt and pepper little bit of butter.
Make like a paste with all add a little olive oil to get the consistency. Take your park loin and cut 1 inch slices in top and put paste in all the sliced holes, then rub the whole roast with it. Pour sherry wine along topBake at 350 for2 hours or 160 thermometer reading. And when done . Set roast aside and make gravy from pan drippings.

Easy Beef Brisket

3 lb all natural beef brisket
14.5 oz. of organic beef broth
sea salt
pepper
Roasted Garlic and Onion Jam- I use Trader Joe’s- 10 oz

preheat oven to 300 degrees

Bring brisket down to room temperature and then season with sea salt and pepper, all sides and place in oven safe dish.

Mix your beef broth and half of your jam in a bowl and mix together.

Poor over brisket and add the remaining jam to the top of the brisket.

Cover with tin foil and cook at 300 degrees for 3 hours.

Rule of thumb is 1 hour=1pound of brisket if you want it nice and tender!

Let rest for 20 minutes before carving and always cut against the grain.

Dad’s Basic Sauce

Dad’s Basic Sauce

  • Olive oil
  • 1 (28 oz) can purée
  • 1 (12 oz) can of paste
  • 2 (12 oz) cans of water
  • salt and pepper to taste
  • dried parsley
  • pinch of sugar

You can double the recipe. Many choices of canned tomatoes to choose from. My aunt Sheila always used “Red Pack”.

Meatballs:

  • 3 lb. ( 85% ) ground beef
  • 2 eggs
  • Minced garlic
  • Italian style breadcrumbs
  • Parmesan cheese
  • Salt and pepper

Mix your ingredients, roll your meatballs. You can bake them in the oven until cooked through, fry them in a pan or put them in the sauce raw. If you put them in raw, you need to cook the sauce on low for many hours. I generally cook it on low for 5 hours. I refrigerate the sauce overnight, skim the layer of fat off the top the next morning and cook on low for a few more hours. Make sure your meatballs are cooked through.

My homemade turkey soup

After you dine on your Turkey (14-20 lbs) boil the remaining the body and meat in water and turkey or chicken broth (I use low sodium) seasoned with sea salt, pepper, red pepper flakes and fresh rosemary chopped fine until the meat easily falls from the bones.
Strain your broth and let body and meat cool so you can “pick” the meat from the bones. Put broth and meat in pot and add the following:
  • Half a head of cabbage or small cabbage head chopped
  • Cut carrots, small package
  • Cut celery, small package
  • 1 yellow squash
  • 1 zucchini
  • 1 large sweet onion

Add additional turkey/chicken broth to cover the vegetables and meat plus additional. Depends on if you want like a stew.

Add additional sea salt, pepper, chopped fresh rosemary, red pepper flakes to taste.

Cook until vegetables are soft but not mushy….
